Agriculture: Natural grass between the rows. No fertilizing, weed killers or pesticides. Only sulphur and copper treatments
Harvest: By hand
Vinification: Spontaneous fermentation on the skins, with native yeasts and without sulphites
Aging: In stainless steel tank, doing maceration with its skins until bottling time, second fermentation in bottle in March of the following year.
Filtration: Never done
SO2: No sulphites added
Production: 800 bottles
Alcohol: 12% vol
HARVEST AND VINIFICATION PROCESS
Grapes are harvested by hand, with a careful selection. We only pick up the best grapes that have reached the right maturation point and we collect them into boxes. The fermentation occurs spontaneously, with native yeasts into stainless steel tanks in contact with the skins. The second fermentation occurs in the bottle, with the yeasts of the grapes themselves, without using any external yeast.
The wine and the must haven’t been neither filtrated nor disgorged. For this reason, in the bottle we have some sediment, which mainly consist of its own yeast.
In stainless steel on the lees and then in the bottle with its own yeast.
